I have been emulating ps1 for a while now so I don't ruin my cds, but I have always kept both the .bin and the .cue. Do I need the .cue or can I just use the .bin?

Do you need CUE files for PSX?
They need something called a cue sheet, which is a special textfile that works as a tracklist. It's supposed to represent a CD-ROM and define which tracks are on the CD-ROM, which order, what format they are (data or audio) and the filename of the bin file for each track.Do you need the .cue file?
Most, if not all, PSX games discs only have a single data track, which makes . cue files totally pointless for PSX game images. If your . cue files contain only the following, then you are free to delete them; if they contain more than a single track record, or the index is not 00:00:00, then you should keep them. Can ePSXe run .CUE files?
ePSXe is supposed to properly support redump multi-bin now. Using the ePSXe CDR plugin with ePSXe SPU you should have been able to just load the cue file.ePSXe 2.0.5 Windows Emulator Setup Tutorial \u0026 Configuration Guide | Play PS1 Games On Your PC
