Super-Duke vassals vs. King vassals in Crusader Kings 2

I am playing through the new Charlemagne expansion for CK2 and have been rather thrown off by the new vassal limits. Previously, I never had much worry and simply made small duchies if any at all. Now, I have to keep track of my vassals more closely. I have actually started giving my Kingdom titles out as my empire is so large, I can't keep up with all of the vassals.
What seems to work better, Super-Dukes (duchy contains 5 or more counties) or Kings?

Who should I give counties to ck2?
When giving away land the priority should be something like this:- your heir (this way you get the lands back when he inherits)
- your family members (they generally like you), assuming you share faith&culture. Preferably uncles/not close kin to avoid the claims. ...
- people of your faith & culture.
What do you do if you have too many vassals?
Captain. You might try lowering centralization to sacrifice one demesne slot for five or so extra vassal slots. If your wife has low diplomacy, try divorcing her and marrying one who has a lot. Transfer all direct count vassals to someone else.What is the point of creating duchies ck3?
Allows your vassals to expand on their own (i.e. if your duke owns 2 of 3 counties in a duchy, you can press the claim on your own, or you can let him do it himself. Dukes are more likely to make improvements on their own (since they gain more money), so less micromanagement.Can you hold more than two duchies ck3?
