What's the difference between Normal mode and Hard?

I have noticed that you can choose between Normal and Hard at the start of a run in The Binding of Isaac: Rebirth. What changes when you choose Hard?

Should I play hard or normal Isaac?

always play hard mode. it's actualy not that harder then normal. It's harder - more curses, more champion enemies, as well as (I think) special rooms have a smaller chance to appear near spawnpoint (that's just my thought). But I also suggest to play on it, especially with The Lost.

What does hard mode do?

Hardmode, as its name suggests, is essentially a more difficult version of the initial world. A world permanently converts to Hardmode after the Wall of Flesh boss is defeated for the first time. Hardmode grants players new challenges and gives them much more content to explore.

Does Hard mode give better items Isaac?

Basically what you experienced. Hard mode makes keys/bombs less common, more champion enemies/bosses, and special item drops become a LOT more rare.
