In minecraft I'm using a couple mods which add biomes and, there are a few of them I'd really rather do without. So I was wondering if theres a way to turn these biomes off, or to keep them from generating in a world at all?

Biome Tweaker should give you the possibility to tweak anything you want using scripts (disabling biomes should also be possible, even with modded biomes).

You will probably find examples on how to do that on the wiki or by googling :)

Can you choose which biome you spawn in?

Players on Java Edition need to type "/locatebiome" in-game and a window will pop up with different options for Minecraft players to pick from. Chose the selected biome of interest and hit enter. This will inform player where the nearest biome of that type is located. Then players can simply or walk or teleport there.

How do you choose which biome you spawn in bedrock?

Yes, all biomes are still present in all seeds, at least in vanilla Minecraft non-superflat maps. "Infinite" biomes are most likely not so, and will end eventually, even if the given biome does appear much larger than normal due to the same biome being randomly assigned.
