My minecraft username is changed but it doesn't appear in-game

Your profile name isn't your in-game name. You can see that your name is changed by looking to the right bottom of the launcher:

When you change you username, you have a 30 day cooldown before you can change your name again (so be sure you pick a name you like). It's caused by remaining logged in after changing your name. Not everything is updated. You need to open the Minecraft launcher, log out, and log back in again (i.e. you need to enter your user and password again). This should fix it.How To Change Your Minecraft Username

Mojang's systems are cached. Try closing your game client and opening it up again after 10 minutes.
If this does not work, then some weird error has gone on in the backend, and it'd be logical to contact Mojang.
