I've been wondering lately why Ezio decided to wear a blue robe when he was in Constantinople, instead of the classic white colored assassin's robe.

Is this ever explained in-game? Did they do it because of a cultural difference? I hope someone can shed some light on this!

Since Assassin's Creed II, it has been shown that Assassins don't always strictly wear white robes, some even wear no traditional robes at all, such as Ezio's uncle. It's not like it's a strict rule or anything.

Why did Ezio change his robes?

Ezio chose to wear a dark blue scarf around his neck to protect himself from the extreme weather. After being ambushed by a large group of Byzantine Templars upon arriving at Masyaf, Ezio removed his cape before combating his attackers, and he did not replace it afterwards.

Assassin's Creed: Revelations is the third and final entry following the life of Ezio Auditore da Firenze. As a brief recap, the original game featured Alta\xefr Ibn La'Ahad, an assassin during the Third Crusade. The second game switched to Ezio and bumped the setting up a few centuries to the Renaissance.

Why do Assassins wear white?

White is mostly associated with purity and peace, quite an ironic choice of wardrobe when our beloved characters dwell in the occupation of assassinations. To choose the white robe as a way of blending in is, of course, ingenious, and it is a tradition the later Assassins keep up.
