Nate as a military veteran:

It would make sense that a soldier who is noteworthy enough to speak at a veteran's hall (mentioned by Nora during character creation as well as in a terminal entry found at Fraternal Post 115) would have some of the same habits as contemporary military leaders, including regular reading (technical specs, combat reports, biographies of other veterans, etc.).

Nora as a lawyer:

Lawyers definitely keep law books for reference purposes, though they are typically at the firm where they practice. However, such sets of law books generally appear as a uniform set (see here for reference), rather than the varied collection seen in the first image. So while the books may be related to law, they could reasonably be anything else, too.

New parents:

Common among expecting and new parents is the acquisition (whether through purchase or gifting) of baby-care books, including popular titles such as What to Expect When Expecting and Dr. Spock's Baby and Child Care. Perhaps their books included information to help them take care of Shaun?

A new Mr. Handy:

Most, if not all, appliances come with some kind of user manual. I imagine (though I do not have evidence at this time) that Mr. Handy robots are no exception. However, such an inclusion would [likely] only account for one book, leaving the rest to be determined.

You're SPECIAL:

Written and published by Vault-Tec, this is the only text of its kind, to my knowledge. No other book that I've come across looks even remotely similar. To that end, this doesn't seem to lend itself to answering what other books they may possess.

Grognak the Barbarian: Jungle of the Bat-Babies:

Nate comments that this issue is his favorite. Grognak was also a member of The Unstoppables team, which included the Silver Shroud. In a dialogue regarding the Silver Shroud with Kent Connolly, Nate mentions that he used to listen to every new episode that aired (see here). Nate is clearly a fan of the series, but unless he has anthology collections of comics gathered into single volumes, all the books in his home are too big to simply be more comic books. Additionally, burned comics are findable loot, of which we find none in protagonist's home after the bombs drop.

Beyond speculations:

I looked at the The House of Tomorrow Fandom page (the home of the Sole Survivor), but did not find any mention of books/literature beyond the two aforementioned named texts. I did find mention of a cut-content terminal originally planned for inside the home, but whether this would contain any relevant information I do not know.

I looked at these Sole Survivor pages (this, that, and other) as well as pages for Nate and Nora individually, hoping to find any clues as to the their interests, but didn't find anything that stood out, with one possible exception regarding baseball (Nate comments somewhere that he wants to get his baseball signed next time they go to the park).

Just in case there might be any hidden clues surrounding books themselves, I also looked at the Fandom pages for burnt books, burnt textbooks, ruined books, ruined history books, and overdue books, but found nothing useful.

While there are plenty of options, it may not be possible to ever really know what books Nate and Nora kept on their shelves.
